We attended the All Ireland Farmers Market Competition in Enniscorthy for the second year running on Sunday 2nd June, and am delighted that we won second place.  It is a wonderful feeling getting the recognition for all the hard work that goes into creating our award winning chocolate.  Very much appreciated!

For the second year running I entered my boxed chocolates in The Irish Food Awards.  There was no award for us last year, but I was still very proud to have made it to the finalist stage and being ranked in the top five in the country, and especially as it was the first time entering a product.  I have worked very hard on the chocolates the last year and have refined and improved them.  They reached the finalist stage again this year....and won The Silver Award. I am so happy and proud that my hard work has been recognized and that the quality of my chocolates are worthy of a Silver Medal.  This is no mean feat and the competition is a tough one.  Thank you to everyone for their kind words since winning this....It really does mean a lot....

Here is the basic truffle recipe that I will be sharing and demonstrating at The Rockin Food Festival in Enniscorthy today.  You can use this to make your own truffles at home.

Ingredients:

*125ml double cream

*200g milk chocolate

*50g dark chocolate

115g unsalted butter

Method:

* Place cream in a saucepan and bring to the boil.  Melt chocolate gently over a simmering bowl of water, add cream and whisk

*  Cut butter into small cubes, add to the mix.  Whisk until smooth.  You can add flavours at this stage if using.  Pour mixture into small bowl and refrigerate for a few hours

* Once the mixture is set, spoon out and roll into balls on parchment paper

* The truffles can be rolled in crushed nuts, coconut or dipped in melted chocolate.  Allow to set and then enjoy!!

It's crazy that the school year is over (not sure where that year went...), but it means that the children's summer chocolate workshops are back.  These will run throughout the summer, every Monday and Tuesday (except bank holiday Monday).  The workshops are held in Karoo Farmshop in Killinick, Wexford. It is a one morning class, that starts at 10:30 am and runs until 12.  The children will get to make their own tray of chocolates with various toppings and also a tray of chocolate lollipops.  They get to have a hot chocolate while their creations set and they get to take all their goodies that they've made home with them.  It is €10 per child.  Spaces are limited and booking is essential.
